Holy Dam

Meteorite? Nup. My sisters dam in Bordertown blew the bottom out into a recently discovered underground river system. The hole is about 9 metres deep - talk about a big plughole.

Good Food & Wine Show
Serious tasting for some, serious swim-through for others, but in all everyone had a blast. We were on a joint stand with Woody (Australia's No.1 Bartender), Scott Callahan (Australia's No.1 Barista), Gibson Wines from the Barossa, and Nepenthe from Adelaide Hills. Mucho fun!  Highlight: seeing Woody get little old ladies to stand up and wave their hand in the their air, and shake their booties like the just don't care.

Cooking with MacGyver
We've learnt how to cook a steak on the engine of your Holden 263, now:
Atlantic Salmon and Caesar Salad in a hotel room
1). Throw 2 eggs (still in their shell) in the kettle
, and keep boiling it, or hold it down for two minutes, then let it sit, while you:
 
2). Fold grease paper around the salmon steak, and start ironing it. Iron it until you can still see some darker pink on the sides (med rare), or light pink all the way through (well done).
3). Take the eggs out of the kettle, and peel off the shells, then place on top of a bed of salad (Caesar salad dressing if they have it in the 7-11, otherwise mayo mixed with wholegrain mustard.)

Top with Capers.

Winter Warmer:
Beef and red wine casserole
Diced lean beef cooked in casserole pot with red wine and lean bacon.   Serves: 2 Preparation Time: 20 minutes Cooking Time: 2 hour s

Ingredients
400 g   diced lean beef
2 tsp   canola oil
2   rashers lean bacon, chopped
6   small onions, peeled and left whole
2   carrots, thickly sliced
2 tbsp   tomato paste
1 1/2 cup   beef stock
1/2 cup   red wine
200 g   button mushrooms

Method
1.   Preheat oven 180° C.
2.   Coat diced beef in a little oil. In a hot pan brown beef and set aside. Reduce heat in pan and add remaining oil, bacon, onion, carrots and tomato paste and sauté until fragrant.
3.   Add stock and red wine, bring to boil and pour into casserole. Cook in oven for 1˝ hours.
4.   Add the mushrooms. Cover and cook for a further 20 minutes.

Serving Suggestion: Snow peas lightly steamed and covered in a wholegrain mustard sauce.

Never tried this variety before? Now it's winter, it's the best time to try it; Tom & Jock Harvey are pushing the norm with their Italian varieties - this one kicks a punch with some high alcohol, but you would never know it: silky smooth, with long rich black cherry and we-integrated charry oak.
